A Twist on Chickpeas


Olive oil 1 onion, diced

1 can chickpeas, drained

3 small garlic cloves, minced

1 tsp Smoked Paprika

1 tsp Cumin

Dash of Cayenne

1 TBS Lemon Juice

Handful of chopped parsley

Feta Cheese

Arugula

  1. Add a tablespoon or so of olive oil to a pan

  2. Place onion in pan on medium-high until onion starts to sweat

  3. Add chickpeas, cook until they get crispy to your desire on the outside

  4. Turn down the heat and add all spices and lemon juice, stir

  5. Remove from heat, add feta and parsley if desired

  6. Serve over a bed of arugula

Remove the Feta and you're eating Vegan or add some lemon marinated chicken for an extra protein kick
