Adulting Quesadilla


I made these on a whim with some leftover Radish Salsa ( another recipe on this webpage!) They are delicious! A quesadilla all grown up.

Ingredients

Tortillas

Vermont Sharp Cheddar Cheese

Cilantro

Green Onion (Chopped)

Cooked Bacon

Radish Salsa

Avocado

Per Tortilla:

Light grating of cheese

A few springs of Cilantro

A pinch Green Onion

1 strip Bacon

1 TBSP Radish Salsa

2-3 Slices Avocado

Steps

1. Warm a pan on Medium heat, no oil

2. Put all ingredients in tortilla except avocado

3. Fold tortilla in half and place in pan, pressing down so it stays shut

4. Heat until crispy on the bottom

5. Repeat the the other side

6. Remove from heat, plate, and serve with avocado!

Consider This

Use a different cheese

Remove the bacon and its vegetarian

Use another salsa

Forget the Tortilla, eat it like a salad! Gluten Free!
